Stracciatella in lemon broth

- 1.5 L homemade meat broth
- 4 organic eggs
- 80 g DOP Parmesan cheese (grated)
- 1 untreated organic lemon
- 1 pinch nutmeg
- 1 pinch salt
- black pepper
First of all boil the homemade meat broth in a large pot.
Then shell the eggs in a bowl and add a nice pinch of salt and a little freshly ground black pepper.
Add a pinch of nutmeg and 1/2 teaspoon of grated lemon zest.
Add the grated Parmesan and beat vigorously with a whisk for a few minutes, until a homogeneous mixture is obtained.
When the broth boils, pour the egg mixture all at once and immediately start mixing with the whisk for a couple of minutes continuously, so that no large lumps form. When the eggs have been mixed evenly the stracciatella will be ready and you remove it from heat.
Serve the hot stracciatella in broth bowls and squeeze a few drops of fresh lemon juice on it at the last moment.
Tip: for a vegetarian version you can replace the meat broth with a good homemade vegetable broth.
