Citrus Savarin with cream and fresh fruit

FOR THE BATH
- 750 ml of water
- 375 gr of sugar
- 3 untreated organic oranges
- 2 untreated organic lemons
- 75 gr of rum
TO DECORATE
- 100 gr currant jelly
- 3 dl whipping cream
- 30 gr icing sugar
- 1 ripe mango
- 1 pink grapefruit
Wash all of the fruit carefully.
Leave aside the ones for decoration that you will cut only at the last moment.
With a potato peeler, peel the lemons and oranges, being careful not to cut off the white pith.
Now prepare the syrup by boiling water, sugar, orange, and lemon peel.
Simmer for a few minutes until the sugar is completely dissolved.
Leave to cool down to 35 ° C.
Dip the cake in the syrup until it becomes soaked.
Drain the savarin on a pastry rack.
Heat the currant jelly with 1 tablespoon of water.
With a brush, spread the gelatin over the savarin making it shiny.
Let it cool completely.
Just before serving, whip the cream with the icing sugar.
Peel and cut the fruit.
Decorate the center of your savarin with fresh whipped cream and fruit.
Bring to the table.
